This delicious poke is a kind of Hawaiian salad often served as an appetizer.
Directions for: Hawaiian-Style Ahi Poke
Ingredients
1 lb(s) fresh sushi-grade Ahi tuna, cut into 3/4-inch cubes
1 sweet onion, thinly sliced
1 English cucumber, seeded and thinly sliced
1 large tomato, seeded and sliced
2 oz Wakame seaweed salad (available at Asian markets)
cup soy sauce
1 tsp sesame oil
2 tsp Sriracha sauce
1 cups uncooked white or brown rice (4 cups cooked)
2 oz crispy deep-fried wonton strips (store-bought or homemade)
1 bunch fresh watercress or baby mixed greens
cup pickled ginger, cut into strips (available at Asian markets)
Sesame seeds (optional)

Directions
1. In a large bowl, stir together Ahi tuna, sweet onion, cucumber, tomato, seaweed salad, soy sauce, sesame oil, and Sriracha sauce.
2. Toss gently and refrigerate until use.
3. In a medium pot, combine uncooked rice, 2 2/3 cup water, and a pinch of salt.
4. Bring water to a boil.
5. Reduce heat to low, cover, and cook for about 15 minutes, until water has been absorbed and rice is tender.
6. Remove rice from heat and set aside to cool slightly.
7. To plate, place the ring mold in the centre of the plate.
8. Press 1 cup of the rice into the mold and carefully remove the mold; repeat with three remaining plates.
9. Using two spoons, scoop the tuna mixture, pressing it lightly with the second spoon to squeeze out moisture.
10. Spoon tuna mixture over and around the circles of rice, repeating process until mixture is divided evenly between the four plates.
11. Drizzle reserved marinade over the tuna and onto the plates.
12. In a clean bowl, toss wonton strips, pickled ginger, and watercress.
13. Pile the watercress mixture over the tuna on each plate.
14. To finish, sprinkle sesame seeds over the watercress and drizzle with Sriracha, if desired.
Tips and Substitutions
Special Equipment: 2-inch ring mold (for plating)
Poke should be consumed right away, as the fish will not keep.
