Ingredients
Crispy Cracked Black Pepper Cacup all purpose flour
tsp baking soda
2 tsp salt
2 tsp chili flakes
2 tsp black pepper
1 cup milk
2 small calamari, cleaned and sliced into rings
cup radishes, thinly sliced
cup cucumbers cut into half moons
2 heads friss, washed and trimmed
2 heads radicchio, cut into strips
cup cherry tomatoes cut in half

Sun Dried Tomato Vinaigrette, recipe below
Prosciutto Croutonscup butter, melted
3 Tbsp Prosciutto, diced
2 cup 1/2-inch cubes crust less sourdough bread
1 tsp coarsely cracked black pepper
Basil & Sun-Dried Tomato Vinaicup sun-dried tomatoes packed in oil drained and chopped
2 Tbsp balsamic vinegar
2 Tbsp red-wine vinegar
1 garlic clove, minced and mashed to a paste with 1/2 teaspoon salt
1 Tbsp finely diced shallot
cup olive oil
1 Tbsp minced fresh basil leaves
Salt and freshly ground black pepper
Directions
Crispy Cracked Black Pepper Ca1. Preheat oil to 365 F in a heavy, deep frying pan or pot. Sift the flour, baking soda and salt into a medium bowl. Add the chili flakes and pepper and stir to combine. Place the milk in a shallow bowl. Dip the prepared calamari into the milk then into the flour mixture. Shake off excess flour.
2. Fry in batches until golden brown and crispy about 2-3 minutes. Remove from oil and dry on paper towels. Season with salt.
3. In a large salad bowl, mix all of the salad greens and garnish together with the vinaigrette. Top the salad with the Prosciutto croutons and calamari.
Prosciutto Croutons1. Melt butter in heavy large skillet over medium heat. Add Prosciutto, cook for 3 minutes. Add bread and pepper and stir to coat. Spread out bread cubes on rimmed baking sheet. Sprinkle with salt and pepper. Bake just until croutons are golden, stirring occasionally, about 15 minutes.
Basil & Sun-Dried Tomato Vinai1. In a small bowl whisk together the tomatoes, vinegars, garlic paste, diced shallots add the oil in a stream, whisking, and whisk the vinaigrette until it is emulsified. Stir in the basil.
