Mahi mahi is a firm-fleshed fish with lots of flavour. With the macadamia nut crust, it's absolutely divine. If you can't get mahi mahi at your local fishmonger, substitute any other firm-fleshed fish steaks, such as swordfish or grouper. Panko are Japanese breadcrumbs and you can buy them at Japanese grocery stores or upscale markets. Maui onions are sweet and delicious but they are only available at certain times of the year so use any sweet onion such as Vidalia. Yield is 4 servings.
