Directions for: Chicken Marsala and Gnocci Twist
Ingredients
Chicken Marsalacup flour
tsp salt
tsp ground black pepper
tsp dried oregano
1 jalapeno pepper, chopped
4 boneless, skinless chicken breast halves, pounded thin
4 Tbsp olive oil
1 cup sliced mushrooms
cup Marsala wine
cup cooking sherry
Ricotta Gnocci1 lb(s) ricotta cheese
flour
1 sprig fresh rosemary, chopped
1 egg
1 pinch salt
1 pinch pepper
oil for sauteing
onion, finely diced
red pepper, seeds and core removed and diced
yellow pepper, seeds and core removed and diced
green onion, seeds and core removed and diced
pkg edamame beans
1 pkg cherry tomatoes
cup white wine
Individual Caesar Salads1 cup mayonnaise
cup skim milk
1 clove garlic, minced
1 heads Romaine lettuce, chopped
Parmesan cheese, grated
bacon bits
1 can French's fried onions
Directions
Chicken Marsala1. In a shallow dish or bowl, mix together the flour, salt, pepper and oregano.
2. Coat chicken pieces in flour mixture. Dust off excess flour.
3. In a large skillet, heat oil over medium heat.
4. Cook chicken until golden brown on each side.
5. Add the mushrooms and jalapeno pepper.
6. Pour in wine and sherry. Cover the skillet and simmer for chicken 10 minutes, or until the juices in the chicken run clear. Turn chicken once halfway through.
7. Serve with ricotta gnocchi and caesar salad.
Ricotta Gnocci1. Mix ricotta, egg, and rosemary, salt and pepper together. Mix in enough flour to form dough.
2. Bring a pot of salted water to a boil.
3. Roll out dough into 2 inch (5 cm) logs and cut into small pieces.
4. Drop into salted water and cook until gnocchi float to the top. Drain and set aside.
5. In a skillet, saut peppers, onion, soybeans and cherry tomatoes.
6. Deglaze with wine.
7. Toss gnocchi with sauted vegetables.
Individual Caesar Salads1. Prepare dressing by mixing together mayonnaise, milk, and minced garlic. Toss together lettuce and dressing. Add Parmesan cheese, bacon bits and fried onions to taste.
