Directions for: Chicken, Cheddar and Fruit Pita Pockets
Ingredients
Chicken, Cheddar and Fruit Pit3 cup diced, cooked chicken (750ml)
cup thinly sliced, seedless green grapes (125ml)
cup shredded old orange cheddar cheese (125ml)
cup finely diced celery (50ml)
2 Tbsp minced Vidalia onion (30ml)
salt and pepper
red leaf lettuce leaves or alfalfa sprouts
sliced cherry tomatoes
Adults:cup mayonnaise (50ml)
1 Tbsp mango chutney (15ml)
1-2 tsp mild curry paste, to taste (5-10ml)
2 Tbsp toasted, slivered almonds (optional, 30ml)
2 whole wheat pitas
Children:cup mayonnaise (50ml)
1 Tbsp peach or apricot jam (15ml)
2 Tbsp golden raisins (optional, 30ml)
8 mini whole wheat pita pockets or 2 regular pitas
Directions
Chicken, Cheddar and Fruit Pit1. In a bowl, combine the chicken with the grapes, cheddar, celery and onion, and season to taste with salt and pepper. Divide mixture into 2 portions. Add ingredients for Adult or Children's version.
2. Slice pitas in half and fill with chicken mixtures. Tuck in red leaf lettuce leaves or sprouts and garnish with sliced cherry tomatoes.
Tip: Use leftover cooked chicken in this recipe for quick results baked, poached, grilled, even store-bought roasted, would all work.
