New Recipes Giant Beans - ★Cooking Recipes★

Make this simple summer salad with lima beans and herbs.
Directions for: Giant Beans

Ingredients

1 cup dried large lima beans

1 Tbsp olive oil

1 clove garlic, minced

1 onion, finely, chopped

1 tsp dried oregano

tsp ground cumin

3 cup chopped tomato

cup water

tsp salt

tsp pepper

tsp grated lemon, rind

1 Tbsp lemon, juice

Directions

1. In pot of boiling water, cook beans for 45 minutes or until tender; drain.

2. In saucepan, heat oil over medium heat; cook garlic, onion, oregano and cumin, stirring often, for 8 minutes or until golden.

3. Add tomatoes; cook for 10 minutes.

4. Add beans, water, salt and pepper; cook, stirring, for 10 minutes or until coated.

5. Add lemon rind and juice.
