New Recipes Baked Plantain

Directions for: Baked Plantain

Ingredients

4 large, semi-ripened plantains, (light yellow with no black spots on them)

2 Tbsp olive oil (30 ml)

4 oz brie ( could use any mild, soft cheese, like cambozola.)

Directions

1. Preheat oven to 350 F degrees.

2. Oil a shallow baking pan that will fit the four plantains with at least inch between them.

3. Cut the ends of each plantain and peel. Rub olive oil on the surface of each plantain and place on the well oiled baking pan and bake for 20 to 30 minutes or until plantains appear golden brown. Take out of the oven and make a length wise slit along each plantain and stuff it with 1 ounce of brie slices. Place back in the oven and broil cheese until melted for one minute.

4. Remove from the oven and serve while plantain is still hot and cheese appears melted.
