10-Minute Chick Pea Saut - ★Cooking Recipes★

When you're in a hurry and you don't want to give up taste, this quick chick pea saut is the ideal side dish to any fish, chicken or meat. If you're not a fan of anchovies you can leave them out, but it's way better with them.
Directions for: 10-Minute Chick Pea Saut

Ingredients

cup pine nuts, toasted (80 ml)

2 Tbsp extra virgin olive oil (25 ml)

2 green onions, chopped

1 clove garlic, sliced

1 anchovy, chopped

1 dried chile , crushed

grated zest of 1 lemon

juice of a lemon

1 can (19 oz/540ml) can chick peas

salt and pepper to taste

cup chicken stock (80 ml)

fresh chopped dill to taste

Directions

1. In a medium skillet toast the pine nuts on medium setting, for 3-4 minutes , tossing frequently. Remove to small bowl.

2. Return same pan to medium heat and add olive oil. When just hot , add the green onions, garlic, anchovy, chile and lemon zest. Saute for 3 minutes , just until garlic is golden , but not brown.

3. Add the chick peas, chicken stock, lemon juice and season with salt and pepper. Simmer for 2 minutes until peas are just warmed through and liquid has slightly evaporated.

4. Remove from heat and add the chopped dill and the toasted pine nuts.
