Tater Tots - ★Cooking Recipes★

A great comfort food recipe, these breaded potato bites are complimented with a homemade crab mayo that's out of this world!
Directions for: Tater Tots

Ingredients

Tater Tots

3 cup leftover mashed potatoes, cold

2 eggs

cup flour

panko breadcrumbs

vegetable oil (or other frying oil)

Crab Mayo

1 cup Dungeness or lump crab

cup mayonnaise

1 lemon, juice and zest

1 Tbsp chives, minced

1 Tbsp dill, minced

2 Tbsp crispy bacon, chopped

Directions

Tater Tots

1. In a large bowl, combine the mashed potatoes, eggs and flour. Stir to combine.

2. Drop about a tablespoon of the potato mixture into the panko bread crumbs. Roll to coat. Use your hands to shape into a tater tot shape. Place on a baking sheet or plate. Continue with the remainder of the potatoes.

3. Heat about an inch of oil in a heavy duty skillet over medium heat, around 350 degrees F. Cook the tots in batches until they are golden brown. Remove from oil and salt immediately and drain on a paper towel lined plate.

Crab Mayo

1. In a separate bowl mix together all the ingredients listed for the crab mayo and incorporate well, season with salt and pepper and serve with the Tater Tots.
