Directions for: Steel Curtain Sandwich
Ingredients
Italian Slaw1 head cabbage
1 cup sugar
1 pinch salt
1 Tbsp celery seed
cup apple cider vinegar
cup olive oil
Fries4 large potatoes
Sandwich & Assembly6 oz sliced pastrami
6 oz sliced capicolla
6 oz sliced salami
6 oz sliced ham
2 slices provolone cheese
4 strips bacon, chopped
2 large eggs
1 loaf Italian berad
1 tomato
Directions
Italian Slaw1. Cut the cabbage in half. Remove the core, the hard centre that you dont want to eat. Slice your cabbage roughly -inch-thick with a knife or mandolin.
2. Add sugar, celery seed, and salt. Toss the ingredients until the slaw starts to feel wet. Let sit 20 minutes.
3. Put in the colander/strainer to remove excess water. Place back in bowl, toss with apple cider vinegar and olive oil.
Fries1. Using a mandolin or a fry cutter, slice the potatoes into 3/8-inch fries. Fry for 2 minutes at 300F. Let cool for 15 minutes.
2. When ready to make a sandwich, fry at 350F for 2-3 minutes for perfect fries (you can also use a bag of frozen fries if you making these at home, and bake them if you dont have fryer).
Sandwich & Assembly1. Slice the Italian loaf into 4 1-inch-thick slices.
2. Crack the two eggs on the griddle. Add bacon to the eggs. Throw your pastrami, salami, capicola and ham in 3 oz portions on griddle. Flip your eggs so theyre cooked through on both sides. Flip your meats so they are heated on both sides, but not burning.
3. Stack your meats into two piles, each with pastrami, salami, capicola and ham. Add provolone cheese to each meat stack. Top each stack with a bacon stuffed fried egg. Put your stacks of meat on the Italian bread.
4. Add a handful of fries on top of the meat. Add a handful of Italian slaw. Top with a sliced tomato and another slice of bread. Cut in half and ENJOY!
