Ingredients

Braised Beef

2 lb(s) beef chuck

2 Tbsp olive oil

4 oz (1 cup) grated Parmesan cheese

1 tsp salt

1 tsp each salt, pepper and cinnamon

12 whole cloves

1 large white onion, cut into 4 wedges

2 cups tomato sauce

Wine Sauce

1 cup flour

cup demi glace powder

2 Tbsp butter

1 large red onion, finely chopped

1 cup red cooking wine

Poutine Assembly

1 cup cheese curds

1 cup shredded Mozzarella

fries, homemade or store-bought

Directions

Braised Beef

1. Preheat oven to 300F (149C). Place beef chuck into a deep roasting pan and drizzle with olive oil. Sprinkle Parmesan, salt, pepper, and cinnamon over top.

2. Press three cloves into each wedge of onion and place wedges into the pan. Pour the tomato sauce over the beef and onions and add enough water to the pan to completely submerse the beef.

3. Seal roasting pan tightly with aluminum foil and bake in oven for 5 hours, or until meat easily falls away from the bone when pulled with a fork.

4. Remove beef from oven; trim fat off the beef and discard onions. Using two forks, shred beef into strands, leaving strands in the roasting pan to soak up pan drippings.

5. Once beef is done braising, pour store-bought fries onto a baking sheet and bake as directed.

Wine Sauce

1. While the fries are baking, combine flour, demi glace powder, and cup water in a small bowl; whisk well to fully combine, making sure there are no lumps.

2. Place butter and onions into a large pot and heat over medium heat; stir while cooking for 2 minutes, or until onions start to soften.

3. Add red cooking wine and 2 cups of water to the pot; bring mixture to a rapid boil over medium high heat.

4. Whisk flour mixture into the pot, stirring until smooth.

5. Turn heat to low and simmer for 5 minutes; turn off heat and cover sauce to keep warm until assembly.

Poutine Assembly

1. Once fries are done baking, place of the fries into a large serving bowl; add of the cheese curds and of the mozzarella. Top fries with braised beef and a good helping of the sauce.

2. Repeat with remaining fries, cheese, braised beef, and sauce.

3. Note: Leftover braised beef will keep in the fridge if covered for up to 3 days.
