Ingredients

Lamb Sausage

1 kg leg of lamb

250 g lamb fat, cubed

2 Tbsp garlic, minced

1 tsp ground fennel seed, toasted

2 tsp sage, mince

4 Tbsp red wine vinegar

1 Tbsp kosher salt

Tbsp black pepper, freshly ground

Arugula Salad

115 g lamb sausage

3 Tbsp smoked sweet corn on the cob

1 oz organic arugula

1 tsp olive oil

1 pinch kosher salt

2 Tbsp pickled sweet peppers

1 Tbsp Asiago cheese

1 Tbsp honey

1 pinch pepper

Directions

Lamb Sausage

1. Mix all ingredients. Pipe into sausage casing with sausage maker.

2. Yield: 10 servings

Arugula Salad

1. Cook sausage in a cast-iron skillet on medium-high heat until it reaches an internal temperature of 145 degrees Fahrenheit.

2. Grill corn until crisp golden brown, then cut off the cob.

3. Dress arugula with olive oil and a pinch of kosher salt. Scatter corn and lamb sausage over top, then dress salad with pickled sweet peppers. Sprinkle Asiago over top, drizzle with honey and finish with freshly ground pepper.

4. Yield: 1 serving.
