Directions for: Trifle Doughnut
Ingredients
Vanilla Glaze3 Tbsp butter
3 Tbsp half-and-half cream, heated
1 tsp vanilla paste
2 cup icing sugar
Pastry Creamcup sugar
4 egg yolks
cup cornstarch
2 cup milk
1 cup raspberry jam
1 cup whipping cream
4 ladyfingers, broken into 1/2-inch pieces
2 Tbsp Grand Marnier
1 raised doughnut, without hole
Assemblyfresh raspberries
silver dragee candies
Directions
Vanilla Glaze1. In the bowl of a stand mixer fitted with a paddle attachment, combine 1 tablespoon of melted butter, the heated cream, and vanilla paste.
2. Mix on low speed while slowly adding 2 cups of icing sugar. Beat on low until silky and smooth. Transfer to a lidded container and set aside.
Pastry Cream1. In a medium bowl, whisk together sugar, egg yolks, and cornstarch.
2. Heat milk in a large pot over medium for 3-5 minutes until almost boiling. Scrape yolk mixture into scalded milk, stirring constantly. Once combined, bring mixture to a boil, then immediately remove from heat.
3. Stir in remaining 2 tablespoons butter until completely incorporated. Set pastry cream aside.
Assembly1. To make raspberry coulis, add raspberry jam through a fine sieve; discard seeds. Transfer to a piping bag and set aside.
2. Combine whipping cream and remaining cup icing sugar in the bowl of a mixer fitted with a whisk attachment. Whip cream for a few minutes until stiff peaks form; transfer sweetened cream to a piping bag and set aside.
3. In a small bowl, toss ladyfingers with Grand Marnier to coat.
4. Dip the doughnut into the vanilla glaze, allowing excess to drip off.
5. Pipe 1 tablespoon of pastry cream into the well of the doughnut.
6. Pipe 1 teaspoon of raspberry coulis over the pastry cream, and add a small swirl of sweetened whipped cream over the coulis.
7. Top with a fresh raspberry and a few silver Dragees. Sprinkle Grand Marnier-soaked ladyfinger crumbs over top.
