Directions for: Thin Crust Spicy Sausage Pizza and Spinach Salad
Ingredients
Cooking spray
1 cup 1 cup matchstick almonds
Liquid honey
tsp tsp salt
Water
1 tsp 1 - 2 tsp olive oil for all pitas
8 6 - 8 pitas (6)
lb(s) lb or 225 g spicy sausage meat
Paper towel
1 can 1 can spicy pizza sauce (7 oz or 213 mL)
cup cup Italiano grated cheese
Previously cooked sausage
10 slices 8 - 10 slices dry salami
of a red pepper (or frozen slivered peppers)
Sliced black olives (optional)
cup cup Italiano grated cheese
1 bag 1 bag washed baby spinach (12 oz or 350 g)
of a red onion
1 1 ripe mango or any other fruit your family likes
cup cup crumbled feta, drained
Reserved almonds
Salad dressing of your choice
Directions
1. Preheat oven to 375 F.
2. Spray a cookie sheet with cooking spray.
3. Spread almonds on cookie sheet, drizzle with honey and sprinkle with salt.
4. Bake for 5 minutes or until golden, watch carefully.
5. Remove from oven and toss almonds occasionally with a spatula to prevent them from sticking to the bottom of the sheet.
6. Cool and reserve for salad.
7. Bring a medium size pot of water to a boil for sausage meat.
8. Brush the smallest amount of oil on the top of the pitas.
9. Form very tiny meatballs with the sausage meat. Drop into the boiling water.
10. Once last meatball has been dropped, set timer for five minutes.
11. Remove to paper towel with a slotted spoon.
12. Spread pizza sauce on each pita.
13. Sprinkle the following over the pitas in this order; cheese, sausage, salami, red pepper strips, olives and more cheese.
14. Bake in hot oven.
15. Set timer for 7 minutes. Check at 5 minutes.
16. The edges should be crunchy and a medium-brown colour.
Meanwhile17. Rinse spinach under cold water and place in salad spinner. Spin dry.
18. Prepare the following salad fixings; slivered red onion, mango chunks and feta cheese.
19. Top with almonds.
20. Serve with your favorite salad dressing, such as raspberry vinaigrette or poppy seed.
