Directions for: Star Anise Macaroons with Tropical Fruit Salad

Ingredients

Macaroons

2 tsp star anise

4 Tbsp lemon juice

3 egg white

tsp cream of tartar

cup sugar

2 cup unsweetened coconut

1 tsp lemon zest

Spiced Tropical Fruit Salad

cup golden pineapple, diced small

1 kiwi, diced small

papaya, diced small

cup mango

1 starfruit, sliced and cut in fifths (to show off points)

juice and zest of one lime

2 Tbsp creamed coconut

2 Tbsp honey

tsp Chinese five-spice powder

To Assemble

Macaroons

1. Preheat oven to 300 F.

2. Crush star anise to start the flavour extraction process.

3. Place anise and lemon juice in a small pot and heat over medium low heat until juice is reduced by half, about 15 minutes. Strain out star anise and set aside.

4. Whip egg whites with cream of tartar until foamy. Slowly add in sugar and keep whipping until a stiff peak.

5. Fold in coconut, lemon zest and spiced juice.

6. Drop by tablespoonfuls onto a parchment-lined baking sheet and bake for 20 minutes.

Spiced Tropical Fruit Salad

1. Toss all ingredients together.

To Assemble

1. Serve tropical fruit salad in a bowl with the star anise macaroons on the side.
