Have a late night craving for chips? Try em in a whole new way with this decadent Doritos dish!

Directions for: Doritos Schnitzel
Ingredients
Cutlets1 large bag (245 g) Doritos, crushed fine or blended in blender
4 butterflied-cut chicken breasts (or pork cutlets), pounded thin to about 1/4 inch
cup Italian breadcrumbs, finely crushed
2 eggs, cracked and beaten
1 cup all-purpose flour
1 Tbsp Dijon mustard
1 pinch thyme
salt and pepper, to taste
2 Tbsp canola oil per cutlet, for frying (8 oz for this dish)
Saucecup blue cheese
cup sour cream
1 small bunch Italian/flat-leaf parsley, finely chopped
fresh lemon, squeezed
Directions
Cutlets1. Lay the butterflied thin cutlets out on a plate.
2. In a large bowl combine the crushed Doritos chips and Italian breadcrumbs together.
3. Prepare 3 separate dredge bowls, one for flour, eggs and Doritos. Ensure the bowls are large enough to dip a cutlet into.
4. Stir the Dijon and thyme into the egg bowl and mix together.
5. Individually dredge each cutlet into each of the 3 bowls starting with flour and ending with Doritos. Complete all 4 cutlets.
6. Heat a large frying pan to a medium high heat add 1/8 cup of oil to fry.
7. Fry each side of cutlet for approximately 2 to 3 minutes until nice until golden and crisp. Cover with paper towels and reserve until you have cooked all 4 cutlets.
Sauce1. Combine and mix well all the ingredients.
2. Reserve and keep cold until needed.
3. Use sauce as base for the cutlets or place a nice dollop onto each one.
