Directions for: Carbonara Francois

Ingredients

1 454 g package of ribbon pasta, such as linguini

8 slices thickly sliced bacon, chopped

4 large egg yolks

1 150 g wheel of French-style cream cheese, room temperature

6 or 8 fresh sprigs of tender fresh thyme, chopped

freshly ground black pepper

Directions

1. In a heavy skillet over medium high heat brown and crisp the bacon, reserving cup of the drippings. In a separate bowl, whisk together the egg yolks, cream cheese and fresh thyme.

2. Cook the pasta in lots of boiling salted water until al dente, 8 to 10 minutes. Drain but dont wash the pot yet! Return the freshly cooked noodles to their cooking pot and toss in the bacon and reserved drippings. Stir the egg yolk mixture into the hot noodles, allowing the heat of the freshly cooked pasta to immediately thicken the works into an egg yolk rich cheese sauce and adhere to the pasta.

3. Garnish with lots of freshly ground pepper, serve and share.
