These rad taco dogs are made with spicy pinto beans, pico de gallo, hot dogs, bacon and a homemade sauce, all wrapped in a corn or flour tortilla.

Ingredients
Pinto Beans2 cups dry pinto beans
1 bunch cilantro, chopped
2 Anaheim peppers, halved
Garlic powder
Salt and pepper
white onion, sliced into matchsticks
Sauce2 cups mayonnaise
cup mustard
cup ketchup
Pico de Gallo2 - 3 large tomatoes, chopped
white onion, chopped
bunch cilantro, chopped
lime, juiced
Salt, pepper and garlic powder
Assemblywhite onion, chopped
4 hot dogs
8 strips raw bacon
8 corn or flour tortilla shells

Directions
Pinto Beans1. To make the beans, add dry beans to a large pot and cover with water.
2. Add onion, cilantro, and Anaheim peppers to the pot and season with a pinch each of salt, pepper, and garlic powder.
3. Cook over low heat for 2 to 3 hours until beans are tender, adding more water as it gets absorbed.
4. Repeat the process, adding water once an hour, until beans are soft.
5. Remove beans from heat and keep warm until assembly.
Sauce1. To make the Sauce, stir together mayonnaise, mustard, and ketchup; set aside.
Pico de Gallo1. To make the Pico de Gallo, stir together tomatoes, white onion, cilantro, and lime juice.
2. Season with salt, pepper, and garlic powder, to taste and set aside until assembly.
Assembly1. Preheat grill.
2. To make the caramelized onions, stir and cook onions over medium heat for about 5 minutes, until golden brown; set aside.
3. Wrap the hot dogs with bacon and grill for 5 to 7 minutes, until bacon is crisp.
4. To assemble the hot dog, warm up tortillas on the grill.
5. Stack two tortilla shells, one on top of the other.
6. Cut cooked hot dog in half and place in the middle of the tortilla.
7. Top with reserved caramelized onions and Pico de Gallo.
8. Drizzle with Sauce and serve with a wedge of lime.
Tips and Substitutions
Special Equipment: Grill
Beans will take 2 to 3 hours to cook.Leftover Pico de Gallo will keep for up to 3 days if covered and refrigerated.
