Directions for: Hot Kelly
Ingredients
Hot Kelly2 large pizza crusts
2 lb(s) pork shoulder
12 - 16 oz jar Char Siu(shoo) Chinese BBQ Sauce
2 Tbsp dark brown sugar
1 Tbsp kosher salt
1 tsp black pepper
2 - 3 Tbsp canola oil
4 - 5 drops red food colouring
1 cup Napa cabbage, shredded
1 cup purple cabbage, shredded
1 medium red onion, sliced thinly
1 cup pickled nacho jalapenos
1 cup prepared pizza sauce
24 oz cheese
Sriracha Aioli2 large egg yolks
cup olive oil
cup canola oil
tsp black pepper
tsp kosher salt
2 tsp lemon juice
2 - 3 Tbsp Sriracha red chili sauce
Directions
Hot Kelly1. Cut the pork into 1 1/2-inch squares and season with salt, and brown sugar, and mix in a bowl.
2. Take a plastic Ziploc bag and add half of the Char Siu sauce and pork. Seal and marinate 1-2 hours.
3. Preheat oven to 400F. Heat a large skillet on the stove, that you will be able to later place in the oven, with canola oil to medium-high for searing the pork. Once it's hot, add pork, searing on all sides. Place pan in oven for 30-35 minutes, stirring every 10 minutes until edges of the pork starts to burn.
4. Remove from oven and let cool. Chop and add remaining BBQ sauce.
Sriracha Aioli1. Place egg yolks into a mixing bowl that will attach to a mixing stand or that you will whisk your eggs in. Whether using either method, whisk egg yolks until an almost pastel yellow, in colour.
2. Mix both oils into one measuring cup that will allow you to easily pour into your mixing bowl that has your egg yolk mixture. When ready, start whisking at medium to high speed, while pouring in the oil at a slow stream so that the emulsification of the egg yolks and oil does not separate. Whisk until all the oil is poured into the bowl. When finished, whisk in salt, pepper and lemon juice. After this, add Sriracha sauce to taste.
3. Spread red sauce and cheese evenly over pizza crust. Layer in this order: pork, jalapeos and then onions. Cook for 10-12 minutes on centre rack with no pan.
4. Once the pizza comes out, top with cabbage mix and drizzle Sriracha aioli. Don't try and overload your pizza before you cook it! the thicker it is, the longer it takes to cook.
