Directions for: Dreamy Beans and Rice for Satchmo Dog
Ingredients
1 tsp granulated onion
1 tsp granulated garlic
tsp cayenne pepper
tsp ground black pepper
1 tsp kosher salt
3 Tbsp vegetable oil
white onion, chopped (1/3 cup)
female green bell pepper (3 nodes on the bottom), chopped (1/4 cup)
1 stalk celery, chopped (1/4 cup)
1 bulb garlic, finely chopped (1/2 cup)
1 cups dried kidney beans
cup Worcestershire sauce
2 bay leaves
tsp parsley
hot dogs
hot dog buns
preferred toppings
Directions
1. To make a seasoning for the beans, mix together granulated onion, granulated garlic, cayenne pepper, black pepper, and salt until fully combined; set seasonings aside.
2. To make the beans, heat vegetable oil in a medium pot over medium-heat.
3. Add the white onion, green bell pepper, celery, and garlic to the pot and stir while cooking for about 2 minutes, until vegetables start to caramelize.
4. Stir beans into the pot and cook while stirring for 4 minutes, or until the beans wrinkle and split.
5. Add the Worcestershire sauce to the pan. The pan will start to smoke, at which point you can add the reserved seasonings, parsley, bay leaf, and enough water to cover the beans by about an inch.
6. Cook until beans are creamy, or until a third of the beans are pasty, a third completely dissolved, and a third still whole.
7. Note: If you happen to burn the beans at the bottom of the pot, dont scrape the pot. The beans on top will still taste good!
8. Serve beans over steamed white or brown rice, or over a hot dog, like they do at Dreamy Weenies!
9. Note: If refrigerated and covered, beans will keep for up to 7 days. If you plan on refrigerating them, bring beans down to temperature by placing the bowl of beans into an ice bath to cool before refrigerating.
