The frosting in this dessert dish is piped to look like spaghetti, topping off cupcakes and further topped off by hazelnut chocolate "sauce and meatballs".
Directions for: Cupcakes with a Chance of Meatballs
Ingredients
Cake1 cup unsalted butter, softened
2 cups sugar
4 eggs, room temperature
2 cups flour
2 Tbsp baking powder
1 tsp salt
1 cup milk
1 tsp vanilla extract
Buttercream Icing1 cup unsalted butter, softened
4 cups icing sugar, sifted
1 tsp vanilla extract
2 - 3 Tbsp milk
tsp unsweetened cocoa powder
3 drops yellow food colouring
Sauce and Meatballscup low-sugar strawberry preserves
11 hazelnut chocolates, unwrapped
2 Tbsp grated white chocolate, plus additional chunk for garnish
Directions
Cake1. Preheat oven to 350F (175C). Line 24 muffin cups with paper liners.
2. Cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time.
3. Combine flour, baking powder, and salt and add in four parts, alternating with the milk and vanilla extract, beating well after each addition.
4. Spoon the batter into the cups, about full. Bake until cupcakes are lightly golden, and a toothpick inserted comes out clean, about 18 minutes. Transfer to wire rack and allow to completely cool.
Buttercream Icing1. Place butter in mixing bowl and add icing sugar, vanilla, and milk. Beat until well combined, smooth and creamy.
2. Tint the vanilla frosting with the cocoa powder and yellow food colouring. Spoon the tinted frosting into a sealable plastic bag and snip a small corner from the bag (1/8-inch) or using a piping bag with a size 3 round tip. Set aside.
Sauce and Meatballs1. Toss the hazelnut chocolates with the strawberry preserves in a medium bowl to coat. Set aside the grated white chocolate to sprinkle on at the end.
2. Arrange the cupcakes tightly together on a serving platter. Pipe the frosting to look like spaghetti noodles all over the cupcakes. Make sure you pile it high and have some frosting hanging over the edges of the cupcakes.
3. Place your chocolate meatballs on top of the cupcakes and add the remaining strawberry preserves. Sprinkle the grated white chocolate all over the top as the Parmesan cheese.
