New Recipes Vitamin Bomb - ★Cooking Recipes★

This delicious version of tomato cucumber salad features the additional bright flavour of butter plus the healthy addition of fibre-rich pumpkin.
Directions for: Vitamin Bomb

Ingredients

4 zucchini (not peeled)

2 medium carrots

2 Tbsp fresh or dried onion

2 Tbsp oil (sunflower seed oil, olive oil, avocado oil, sesame oil)

1 tsp salt

1 tsp fresh or dried parsley

tsp garlic powder or 2 cloves of fresh garlic

50 g (1.7 oz) of double smoked bacon (optional)

100 g (3.5 oz) pumpkin (any kind)

Directions

1. Grate the zucchini and carrots, and then stew it together with 1 tbsp. of oil, onion and garlic for 10 minutes. Separately, stew the pumpkin cut into cubes with 1 tbsp. of oil.

2. Fry the double smoked bacon until golden. When these mixtures are over, combine them, and add the parsley and salt. Stir it well.

Tips and Substitutions

You can serve this dish as an appetizer, salad or the main meal
