This battered fish and salad dish will definitely have your family asking for seconds.

Ingredients
Fish23 oz white fish, cut into 3 portions
1 Lemon wedges for garnish
Batter Recipe1 cup flour
2 tsp baking powder
2 eggs, lightly beaten
1 tsp salt
cup water
4 Tbsp vinegar
1 Tbsp fresh dill, finely chopped
1 cup long grain white rice
flour for dredging
canola oil for frying
Spinach Salad6 cup baby spinach leaves
2 Tbsp orange juice
2 tsp orange zest
3 Tbsp olive oil
1 Tbsp balsamic vinegar
1 tsp liquid honey
1 tsp Dijon mustard
2 Tbsp chevre (soft, unripe goat cheese)
4 oz blackberries
Directions
Fish Batter Recipe1. Cook rice according to package directions.
2. Mix dry ingredients, and then add water, vinegar, and egg to make a smooth batter. Mix in dill.
3. Dip fish in flour, then batter, letting excess batter drip off the fish.
4. Put enough oil to just coat the bottom of a preheated frying pan.
5. Add fish and cook until golden brown on each side (approximately 4 to five minutes per side).
6. Drain fish on a paper towel.
7. Enjoy with a wedge of fresh lemon, rice and spinach salad.
Spinach Salad1. Set the washed and dried spinach in a salad bowl.
2. Whisk the juice, 1 teaspoon orange zest, oil, vinegar, honey and mustard together in a small bowl.
3. Add the chevre and stir until dissolved.
4. Pour the dressing over the spinach and toss to coat.
5. Garnish with blackberries and remaining orange zest.
