Directions for: Asian Green Bean Salad with Three Sesame Dressing

Ingredients

2 lb(s) or 1 bunch of Asian long beans, root ends trimmed

Olive oil

1 Tbsp sesame oil

cup tahini paste

2 limes, juiced and zested

A dash or two of your favourite hot sauce

1 tsp soya sauce

cup honey

2 Tbsp sesame seeds

Directions

1. Put beans into a large saut pan and add a big splash of water and a splash or two of olive oil. Cover with a tight-fitting lid and heat over high heat, steaming the beans. Theyre done when bright green and tender, about 3-5 minutes. When the water evaporates and the beans are tender the remaining olive oil will begin to sizzle. If you like you may continue, removing the lid and lightly browning them for a few minutes.

2. Meanwhile whisk the sesame oil, tahini, lime juice, hot sauce, soya, and honey into a bowl and whisk until smooth. When the beans are done place them on a serving plate and drizzle them with the dressing. Sprinkle the sesame seeds evenly over the top.
