Directions for: Handcrafted Bacon Tots

Ingredients

3 lb(s) potatoes, shredded

8 oz shredded Cheddar

6 oz finely chopped bacon

cup all-purpose flour

cup cornmeal

cup vital wheat gluten

5 tsp kosher salt

tsp black pepper

tsp granulated garlic

tsp granulated onion powder

cup vegetable oil, plus more for frying

cup eggs

Directions

1. In a heavy bottomed pot or deep fryer, preheat oil to 350F.

2. In large bowl, mix together shredded potato, Cheddar, and bacon.

3. Stir in flour, cornmeal, wheat gluten, salt, pepper, garlic, and onion powder.

4. In a separate bowl, stir together cup vegetable oil and eggs; stir mixture into the potatoes until combined.

5. Roll mixture into cup balls and drop into the hot oil. Fry for 2 to 2 minutes, until golden brown.

6. Remove tots from the fryer and drain on a paper towel.

7. Serve 6 tots per serving with your favourite dipping sauce (barbecue, ranch, honey mustard, or ketchup).
