Directions for: Sauteed Scallops and Grilled Arugala Salad with White Truffle Oil

Ingredients

1 handful spinach

1 handful aragula leaves

olive oil

lemon juice

soy sauce

pepper

chopped garlic

diced tomato

diced mushrooms

thinly sliced raw mushrooms

5 scallops per person

white truffle oil

Directions

1. Put Arugala in a bowl. Season with olive oil, lemon juice, soya sauce and pepper.

2. On the grill, place a very thinly wired grill and allow it to heat up. Using a pair of tongues, rapidly grill the greens over the thin grill, just a few seconds.

3. Put the greens back in the bowl. Add a little bit of chopped garlic, diced tomato, diced mushrooms and thinly sliced fennel. Mix well and add seasoning if necessary.

4. Delicately place the greens in the center of a plate and decorate with thin slices of raw mushrooms.

5. Quickly marinate scallops on both sides with lemon juice, soy sauce and olive oil and promptly pan fry in a very hot non stick pan. Both sides should be caramelized but the center still medium rare, juicy and sweet.

6. Place the scallops around the salad of arugala. Season with some of the marinade and add a few drops of white truffle oil.
