Directions for: Retro Cobb Salad

Ingredients

1 heads Boston lettuce, washed and torn into 1-inch pieces

1 heads Romaine lettuce, washed and torn into 1-inch pieces

1 bunch watercress, trimmed and washed

1 1 Belgian endive, washed and cut into 1-inch pieces

2 2 small ripe tomatoes, washed, cored and cut into inch cubes

8 oz cooked chicken, boned and shredded (230 g)

6 1 oz slices of bacon, cooked until crisp (170 g)

2 2 ripe avocados, peeled and sliced just before serving

4 large hard boiled eggs, peeled and halved

lb(s) Roquefort cheese (225 g)

cup cider vinegar (60 ml)

1 clove garlic, peeled and finely chopped

cup olive oil (175 ml)

Fresh chives, cut on a diagonal into 1 inch/2 cm lengths

Salt and pepper, to taste

Directions

1. Toss the lettuces together in a bowl. Lay a bed of the mixed lettuce on a large platter.

2. Lay the tomato, chicken, bacon, sliced avocado, egg and Roquefort cheese over the lettuce.

3. Combine the vinegar, garlic and some seasoning in a small bowl and slowly whisk in the olive oil. Check the seasoning and pour the vinaigrette over the salad.

4. Sprinkle the salad with the chopped chive batons and serve.
