Citrus Chicken Legs - ★Cooking Recipes★

Directions for: Citrus Chicken Legs

Ingredients

cup marmalade

2 Tbsp melted butter

2 tsp Dijon mustard

6 chicken legs (with skin)

2 oranges, sectioned, peeled and pith removed

Sections of 1 pink grapefruit, peel and pith removed

cup chicken broth

Salt and pepper

Directions

1. With the rack in the middle position, preheat the oven to 180C (350F).

2. In a bowl, combine the marmalade, butter and mustard. Set aside. Place a chicken leg on a clean surface. Create a pocket by gently working your fingers under one side of the skin, loosening it without tearing the skin or, if possible, detaching the other sides. Repeat for the other legs. Slip the citrus sections into the pockets. Place the legs skin side up in a baking dish. Add the broth. Brush the meat with the marmalade mixture. Season with salt and pepper.

3. Bake until the meat pulls easily from the bone, about 1 hour.Serve the legs with the cooking juices and Lemon Rice (see recipe).
