This spring-themed treat is made up of a delightful Oreo cookie crumb crust with a chocolatey filling, topped off with a chocolate hen and a sprinkling of small candy-covered chocolate eggs.
Directions for: Chocolate Hen's Nest Pie
Ingredients
Crote2 cups (500 mL) Oreo cookie crumbs
2 Tbsp (30 mL) sugar
6 Tbsp (90 mL) unsalted butter
Filling2 tsp (10 mL) gelatin
cup (60 mL) cold water
cup (60 mL) sugar
2 Tbsp (30 mL) unbleached all-purpose flour
2 eggs
1 cup (250 mL) milk, warm
12 oz (335 g) milk chocolate, chopped
cup (125 mL) 35% cream
Chocolate hen, about 4-5 inches (10-15 cm) across
1 cup (250 mL) dark chocolate shavings
1 cup (250 mL) milk chocolate shavings
Small candy-covered chocolate eggs
Directions
Crote1. With the rack in the middle position, preheat the oven to 180C (350F).
2. In a bowl, combine all the ingredients. Press the mixture evenly on the bottom and sides of a 27cm (10.5-inch) pie plate. Bake for about 10 minutes. Let cool.
Filling1. In a small bowl, sprinkle the gelatin over the water. Let bloom for 5 minutes. Set aside.
2. In a saucepan off the heat, combine the sugar and flour. Add the eggs and whisk until smooth.
3. Whisk in the warm milk. Bring to a boil over medium heat, whisking constantly and taking care to scrape the bottom and sides of the saucepan. Remove from the heat as soon as boiling begins. Add the gelatin and stir until completely dissolved.
4. Add the chocolate and let rest for 2 minutes. Stir until the chocolate is completely melted. Transfer the filling to a bowl and cover with plastic wrap directly on the surface of the filling. Refrigerate until cooled to room temperature but not set, about 30 minutes.
5. In a bowl, whip the cream until it forms stiff peaks. With a rubber spatula, gently fold the whipped cream into the chocolate mixture. Pour into the crust. Refrigerate until set, about 4 hours.
6. Just before serving, place the chocolate hen in the centre of the pie. Garnish with chocolate shavings and candy-covered chocolate eggs.
