Seared boar on a light and refreshing watercress and tomato salad.
Directions for: Wild Boar Bacon & Watercress Salad with a Warm Shallot, Heirloom Tomato and Vinaigrette
Ingredients
Wild Boar Bacon & Watercress Scup wild boar bacon, cut into dice
6 slices wild boar bacon, about 1/2 thickness
1 cup heirloom cherry tomatoes, cut in half
3 shallots, finely diced
2 Tbsp chopped parsley
cup olive oil
3 cup olive oil
Salt and pepper
Balsamic Reductioncup Balsamic Vinegar
Directions
Wild Boar Bacon & Watercress S1. In a heavy skillet cook diced bacon over moderate heat, stirring occasionally, until golden and crispy about 5 minutes. Turn heat down to low, then add the shallots, cook for another 2 minutes until shallots are tender. Add the cherry tomatoes and parsley to the pan, cook for another 2 minutes. Whisk in oil and season with salt and pepper. Remove warm vinaigrette from the heat.
2. In a heavy skillet over moderately low heat, sear the 6 thick wild boar bacon slices on both sides, until golden brown. About 2 minutes per side.
3. Place the slice of wild boar bacon on the plate. Divide the watercress evenly amongst the 6 plates, top with the shallot and heirloom vinaigrette. Drizzle the plate with balsamic reduction.
Balsamic Reduction1. Place balsamic vinegar in a small saucepan until reduced to 3 tablespoons, about 6 to 7 minutes.
