Directions for: Smoked Salmon Tostada with Herbed Sour Cream and Pickled Red Onions

Ingredients

Herbed Sour Cream

2 cups sour cream

1 tsp garlic, minced

1 Tbsp dill, chopped

1 Tbsp parsley, chopped

1 lemon, zested and juiced

Pickled Red Onions

4 red onions, sliced thin on a mandolin

cup sugar

cup white vinegar

5 cups water, divided

1 pinch salt

Tostada

your favourite crisps, crackers or tostadas

Directions

Herbed Sour Cream

1. Mix in a bowl place and store in refrigerator.

Pickled Red Onions

1. Bring 4 cups of water to a boil. Blanch sliced red onions for 1 minute.

2. Bring water sugar, salt, and vinegar to a boil, dissolving sugar.

3. Add blanched red onions to the pot.

4. Place in an insert or bowl and cover with plastic wrap.

Tostada

1. Place a dollop of Herbed Sour Cream on a crisp and add a fold of smoked salmon.

2. Garnish with Pickled Red Onions, fresh herb (dill or fennel) and a drizzle of olive oil.
