Chicken Gumbo - ★Cooking Recipes★

Adjust the spiciness of this Louisianna inspired dish with your favourite hot sauce. Brought to you by Uncle Ben's.
Directions for: Chicken Gumbo

Ingredients

1 Tbsp (15 mL) oil

4 boneless, skinless chicken thighs, cubed

1 onion, chopped

4 clove garlic, minced

2 Tbsp (30 mL) Cajun seasoning

cup (125 mL) white wine

1 cup (300 mL) UNCLE BEN'S WHolegrain Brown Rice

2 cup (500 mL) sodium-reduced chicken broth

1 can (398 mL) diced tomatoes

tsp (2 mL) each salt and pepper (approx.)

1 green pepper, chopped

hot sauce

lemon wedges

Directions

1. Heat the oil in large, nonstick skillet set over medium heat. Add the chicken, onion, garlic and Cajun seasoning. Cook for 10 minutes or until browned.

2. Add the wine; simmer for 1 minute. Stir in the UNCLE BENS Wholegrain Brown Rice until well coated. Add the broth, tomatoes, salt and pepper; bring to a boil. Stir in the green pepper.

3. Cook, covered, for 15 minutes or until rice is tender and fluid is absorbed. Adjust salt and pepper to taste. Serve with hot sauce and lemon wedges.

4. Tip: Add cooked shrimp or sliced smoked sausage with the green pepper.
