Bannock Berry Bliss - ★Cooking Recipes★

A great comfort food dessert, coupled with blackberry and raspberry compote. Yum!

Directions for: Bannock Berry Bliss

Ingredients

Bannock

3 cup flour

3 Tbsp baking powder

cup sugar

1 tsp salt

lard for frying

Blackberry Compote

2 cup blackberries

Tbsp butter

cup golden brown sugar

cup white sugar

tsp vanilla

1 pinch salt

Raspberry Compote

2 cup raspberries

cup white sugar

lemon, juice and rind

1 pinch salt

Directions

Bannock

1. Preheat lard in a deep frying pan to 350 degrees Fahrenheit.

2. Mix dry ingredients together.

3. Add water until dough forms, mix until just combined. Do not over mix or dough will become tough.

4. Divide dough into 12 pieces and form into small cakes with your hands.

5. Drop dough into lard and fry until golden brown on both sides and cooked through. Serve bannock with blackberry and raspberry compotes.

Blackberry Compote

1. Cook berries in a saucepan over medium heat until softened. Add remaining ingredients and cook until sugar is dissolved.
