Here comes the authentic Izakaya dish, featuring thick udon noodles, pan-fried with tender beef, topped with green onion, mushroom, dried seaweed and flavourful bonito flakes.
Directions for: Yaki-Udon (Pan Fried Noodles)
Ingredients
200 g udon noodles, frozen
10 mL vegetable oil
50 g beef, sliced
10 g green onion stalk
30 g button mushroom
2 mL garlic, minced
10 mL sake
10 mL soy sauce
1 g dashi powder, bonito soup stock
g shichimi, Japanese mixed seven spice
10 g butter
2 mL white sesame seeds
2 g Bonito flakes, pinch (optional)
1 pinch nori, shredded
Directions
1. Start by boiling the udon noodles for 2 minutes, until al dente. Drain excess water and set cooked noodles aside.
2. In a pan, heat oil and add the sliced beef. Fry until it is almost fully cooked, for about 2 minutes.
3. Add minced garlic, green onion, and mushroom to the pan and saut for about 1-3 mins.
4. Deglaze with sake.
5. Add the udon noodles to the pan and seasoned it with dashi, shichimi and soy sauce. Pan fried for about 3 minutes or until it is well mixed.
6. Remove it from the heat and finish it with butter and the rest of toppings for plating.
Tips and Substitutions
Yaki means pan fried, Udon means noodles. Guu in Japanese means good. They also call the sound your stomach makes when you are hungry a Guu sound. An Izakaya is a type of informal Japanese pub.
