Directions for: Urban Spy
Ingredients
Pork & Rub1 whole bone-in pork shoulder
1 cup dark brown sugar
1 tsp thyme
1 tsp garlic salt
1 tsp dry mustard
1 tsp each salt and pepper
6 whole fresh Northern Spy apples, or your favourite cooking apple
Apple Rub & Assemblycup dark brown sugar
tsp allspice
tsp nutmeg
1 tsp each salt and black pepper
6 whole fresh Northern Spy apples, or your favourite cooking apple
1 bunch chives
cup almonds, sliced
sweet chili sauce, BBQ sauce and sour cream as desired
Directions
Pork & Rub1. Combine pork rub ingredients in a medium bowl. Vigorously rub pork shoulder with the mixture. Wrap shoulder in plastic and refrigerate overnight.
2. Smoke pork shoulder at 225F for 14-16 hours. Centre bone should easily be removed when ready.
3. Break up pork into bite sized pieces and set aside. If a smoker is not available, use conventional oven.
Apple Rub & Assembly1. Combine apple rub in a medium bowl. Core and peel apples, rub with mixture.
2. Preheat oven to 350F. Place 1/2 inch of water in a shallow baking dish big enough to accommodate the 6 apples. Place apples in baking dish, cover, and put in the oven for approximately 15 minutes, or until apples are tender, but not mushy.
3. Remove apples from oven; carefully stuff until overflowing with pulled pork. Garnish with chopped chives and toasted almonds. Drizzle with a sweet chili sauce, BBQ sauce, and sour cream to taste. Serve immediately.
