This dessert pizza includes chocolate "pepperoni", a cookie dough base and raspberry compote.

Ingredients

Cookie Dough Base

1 cup butter, softened

cup sugar

1 cups packed brown sugar

2 eggs

2 tsp vanilla extract

1 tsp baking soda

2 tsp hot water

tsp salt

3 cups flour

2 cups semisweet chocolate chips

Raspberry Compote

2 cups frozen raspberries

cup water

2 Tbsp corn syrup

1 Tbsp cornstarch

Chocolate "Pepperoni"

1 can condensed milk

3 cups semisweet chocolate chips

1 tsp unsalted butter

1 cup caramel popcorn, crushed

Assembly

1 bar white chocolate, shaved

Green chocolate-covered almonds

Directions

Cookie Dough Base

1. Preheat oven to 350F (175C).

2. Mix together butter, sugar, and packed brown sugar until smooth. Beat in the eggs one at a time, stir in the vanilla.

3. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour and chocolate chips.

4. Grease a 9-inch spring form pan and line with parchment paper. Press the cookie dough into the pan, creating an edge to mimic a pizza crust shape.

5. Bake 10 minutes, or until edges are nicely browned.

Raspberry Compote

1. Place raspberries, water, and corn syrup into a small saucepan. Bring to a boil, and reduce heat to low. Let cook, stirring occasionally for about ten minutes, until most of the water is reduced.

2. Add cup water and cornstarch together. Using a whisk, slowly add cornstarch to compote, and continue to whisk for 3-5 minutes. Remove from heat.

Chocolate "Pepperoni"

1. Combine condensed milk, chocolate chips, and butter. Microwave for 2 minutes or until chocolate has fully melted. Add in the crushed caramel popcorn.

2. Lay out two pieces of plastic wrap on top of one another. Spoon the chocolate mixture across the width of the plastic wrap. Roll it up, tying one end to make it tight. Twist the open end until it creates a tight roll. Place in the fridge for 12 hours.

3. To create pepperoni like slices, open roll and cut -inch slices of the chocolate.

Assembly

1. Spread the raspberry compote on the face of the cookie. Add chocolate pepperoni slices, green chocolate almonds and white chocolate shredding to personal preference. Cut with a pizza cutter or knife into triangular slices to serve.
