Opa! An easy and delicious Greek meal of lamb chops, potato fries, Greek salad and tzatziki.

Directions for: Lovin' Lamb Chops
Ingredients
Lamb2 New Zealand rack of lamb, trimmed and cut into chops
1 cup extra virgin olive oil
1 Tbsp salt
1 tsp pepper
1 tsp oregano
1 tsp rosemary, chopped
1 lemon
Fries2 Yukon Gold potatoes
cup goat's milk feta cheese
vegetable oil for frying
salt
Greek Salad6 roma tomatoes, cut into wedges
1 cucumber, cut into chunks
1 red onion. diced
1 cup olive oil
1 tsp oregano
cup Kalamata olives with pits
cup balsamic vinegar
Tzatziki1 cup Greek yogurt
cup long English cucumber, grated
2 clove garlic, finely chopped
2 Tbsp olive oil
2 Tbsp lemon juice
1 sprig fresh dill, chopped
sea salt and white pepper to taste
Directions
Lamb1. Season the lamb with olive oil, salt and pepper to taste, oregano, rosemary and lemon juice.
2. Let sit for at least 10 minutes to marinate.
3. Grill over high heat until medium rare, about 2 minutes per side.
4. Serve 3 chops per person with Greek salad, fries and tzatziki.
Fries1. Cut potatoes into fries.
2. Deep fry at 375 degrees Fahrenheit until golden and cooked through. (190.5 degrees Celsius)
3. Drain on paper towels and season with salt.
4. Sprinkle with goat cheese while still warm.
Greek Salad1. Toss all ingredients together.
Tzatziki1. Squeeze the cucumber to remove excess liquid.
2. Mix all ingredients together.
