Directions for: Ground Nut Salmon, Rice and Salad with Grilled Plantain Salad
Ingredients
2 2 ripe plantains
1 tsp 1 tsp peanut oil
1 pinch Pinch of salt
1 cup cups basmati rice
3 cup 3 cups water
1 tsp 1 tsp canola oil
Spanish onion
1 pinch Pinch of black pepper
tsp tsp curry powder
2 tsp 2 tsp prepared garlic (from a jar)
2 Tbsp 2 tbsp peanut butter
1 cup cups vegetable stock (low sodium)
2 2 firm Roma tomatoes
1 1 red pepper
Cooking spray
5 fillets 5 skinless salmon filets (approx 6 oz or 175 g each)
Paper towel
tsp tsp Mrs. Dash Garlic and Herb Seasoning
tsp tsp thyme leaves
1 bag 1 bag cut and washed Romaine (spinach for the adults)
2 1 or 2 Mandarin oranges
Slivered onion (optional)
Prepared plantain discs
Jamaica Mistake salad dressing
Peanuts (optional)
Directions
1. Preheat oven to 400 F.
2. Slice plantains into very thin discs and place in a mixing bowl.
3. Drizzle with peanut oil and mix well to coat plantain.
4. Place on a cookie sheet and lightly sprinkle with salt.
5. Bake until each side is a nice golden brown, approx 10 minutes per side, gently turning discs over using a sharp edged lifter. Let stand. They will crisp up while cooling.
While oven is preheating
6. Combine water and rice in a large microwave safe pot with lid.
7. Microwave at high for 10 minutes, then medium 10 minutes. Let stand.
8. Add oil to a heavy pot and heat on medium.
9. Finely chop onion and saut in pot until soft, translucent and just slightly brown.
10. pepper, curry powder, garlic, peanut butter and stock.
11. Chop tomatoes and add to pot. Sliver red pepper adding to pot 5 minutes before serving.
Meanwhile
12. Spray a nonstick pan with cooking spray.
13. Rinse salmon under cold water. Pat dry with paper towel and season one side.
14. Saut spice side down over medium heat, approx 2 minutes.
15. Season, turn and saut other side for 2 minutes, or until seared. Cover and let stand with no heat.
While salmon is searing
16. Rinse lettuce in a salad spinner and spin dry.
17. Layer salad with mandarin pieces, slivered onion and prepared plantain then drizzle with dressing. Top with peanuts.
18. This meal is just amazing, quick to make and you dont need to be Nigerian to fall in love with this dish!
