Chicken Kabobs - ★Cooking Recipes★

Try these Chicken Kabobs by the Spice Goddess, marinated in tamarind water and mint, these are no ordinary kabobs.
Directions for: Chicken Kabobs

Ingredients

1 cup finely chopped mint leaves

2 Tbsp chopped ginger

2 Tbsp tamarind water

1 Tbsp brown sugar

1 Tbsp garam masala

cup plus 3 tablespoons grape seed oil

2 chicken breasts, boneless and skinless, cut into 1.5-inch cubes

Directions

1. Preheat the oven to 375F.

2. In a large bowl, mix together mint, ginger, tamarind water, sugar, garam masala and 1/4 cup of oil. Add chicken and mix it well. Cover and allow marinating in the fridge for 30 minutes to 2 hours.

3. Thread the chicken onto the 4 skewers. Add the remaining oil to a pan on medium to high heat and grill the chicken for the grill and place the skewers onto it. Grill, turning frequently and basting with remaining marinade for about 1 to 2 minutes per side, until chicken is browned. Finish cooking the chicken in the oven for 5 to 10 minutes. Cut a piece of chicken open with a small knife to test for doneness.

4. Note: If using bamboo skewers, cover with water and soak overnight.
