Ingredients

Buttermilk Biscuits

2 cup flour

2 Tbsp baking powder

tsp salt

3 Tbsp shortening

3 Tbsp butter

1 cup buttermilk

Sausage Gravy

cup butter

2 medium onions, finely chopped

4 (3-oz) Bratwurst sausages, casing removed and cut into 1/4-inch pieces

tsp garlic powder

dried thyme

cup flour

3 cup milk, warmed

tsp Worcestershire sauce

Charlie Bowl Assembly

cup butter

4 russet potatoes, peeled and grated

cup ham, finely cubed (1-inch x 1-inch dice)

2 Tbsp green onion, chopped

cup Cheddar cheese, grated

8 eggs

salt, to taste

pepper, to taste

Directions

Buttermilk Biscuits

1. Preheat oven to 400F.

2. In a large mixing bowl, sift together flour, baking powder, salt, and sugar; reserve remaining flour.

3. Cut butter and shortening into the flour using a pastry cutter or fork, until the dough is crumbly and pea-sized.

4. Stir in buttermilk until just combined.

5. Dust work surface with flour and knead dough for 1 minute; form dough into a ball and roll out into a rectangle 1-inch thick.

6. To cut biscuits, press cookie cutter straight down into the dough without twisting. Continue cutting biscuits. Press together scraps and roll out dough again into a 1-inch thick rectangle. Cut biscuits. Repeat until all dough is used up.

7. Arrange biscuits on a baking sheet lined with parchment paper.

8. Bake for 15-20 minutes, turning once during cooking. Bake until biscuits are golden brown on the bottom, slightly browned on top, and sound hollow when tapped.

9. Remove biscuits from oven and set aside to cool.

Sausage Gravy

1. Melt butter in a medium saucepan over medium heat. Add onions; stir and cook for 3 minutes, or until onions are translucent.

2. Add sausage, garlic powder, salt, and dried thyme into the pan and continue cooking until sausages are cooked through and all the pink is gone.

3. Add flour into the pan and cook for an additional 5-8 minutes, or until gravy thickens.

4. Whisk warm milk into the gravy and reduce heat to medium low. Continue stirring while cooking until gravy comes to a simmer and is thick enough to coat the back of a spoon.

5. Add Worcestershire sauce and season with salt and pepper, to taste. Reduce heat to low and keep warm until ready to plate.

Charlie Bowl Assembly

1. Preheat oven to 400F.

2. Warm 2 tablespoons of butter in a large nonstick oven-safe pan over high heat; once butter has melted, add shredded potatoes in four piles. Add salt and pepper, to taste.

3. Cook and stir for 5 minutes, or until potatoes are crispy and golden brown.

4. Flip hash browns in pan and remove pan from heat immediately; top each pile of hash browns with ham, green onion, 1 crumbled biscuit, and grated cheddar cheese.

5. Place pan in the oven for 6-8 minutes, or until cheese melts.

6. While Charlie Bowl is baking in the oven, fry sunny side eggs in a large pan over medium heat until whites are opaque and solid.

7. When eggs are done and the Charlie bowl is uniformly hot, remove pan from oven and plate hash browns.

8. Top hash browns with sausage gravy and two fried eggs.
