Ingredients

2 pouch UNCLE BEN'S BISTRO EXPRESS Long Grain & Wild - Fine Herbs rice

2 cup (500 mL) baby spinach, chopped

2 cup (500 mL) cooked chicken, chopped

1 cup (250 mL) celery, chopped

1 Granny Smith apple, chopped

cup (125 mL) walnuts, chopped and toasted

cup (125 mL) dried cranberries

cup (60 mL) green onion, finely chopped

2 Tbsp (30 mL) olive oil

2 Tbsp (30 mL) grainy Dijon mustard

1 Tbsp (15 mL) honey

1 Tbsp (15 mL) white wine vinegar

Directions

1. Prepare the UNCLE BENS BISTRO EXPRESS Long Grain & Wild Fine Herbs Flavour rice. Transfer to a large bowl; cool slightly.

2. Stir in the spinach, chicken, celery, apple, walnuts, cranberries and green onion.

3. Whisk the oil with the mustard, honey and vinegar. Drizzle over the rice mixture; toss to coat.

4. Tip: Substitute chickpeas for the chicken to create a vegetarian dish.
