Bake cobblers in nice coffee cups and finish with chantilly cream, raspberry sauce and maple toasted pecans.These make a great snack on their own, or are a nice addition over a salad.
Directions for: Raspberry Cardamom Cobbler with Chantilly Cream, Raspberry Sauce and Maple Pecans
Ingredients
Cobbler2 cup red raspberries, fresh or frozen
2 cup Mutsu (Crispin) or Granny Smith apple, peeled and diced
cup sugar
2 Tbsp all purpose flour
1 tsp cardamom
tsp cinnamon
2 cup all purpose flour
3 Tbsp cornmeal
cup sugar
2 tsp baking powder
tsp salt
cup unsalted butter, cut into pieces and chilled
cup milk
zest of one lemon
1 tsp vanilla extract
Chantilly Cream1 cup whipping cream
2 Tbsp sugar
1 tsp vanilla extract
Raspberry Sauce3 cup red raspberries, fresh or frozen
cup sugar
zest of one lemon
Maple Toasted Pecans2 cup pecan halves
2 Tbsp maple syrup
To AssembleDirections
Cobbler1. If cooking cobbler in a large dish, preheat oven to 325 F and if preparing in coffee cups, preheat oven to 350 F.
2. Toss fruit with 1/2 cup sugar, 2 Tbsp flour, cardamom and cinnamon and spoon into baking dish or coffee cups.
3. In a mixing bowl or in an electric mixer fitted with the paddle attachment, combine flour, cornmeal, 2/3 cup sugar, baking powder and salt. Cut in butter until the texture of coarse meal.
4. Blend together milk, lemon zest and vanilla and add to pastry, mixing until pastry just comes together.
5. Spoon dough onto fruit, leaving a little space between spoonfuls to allow for expansion as cobbler bakes.
6. Bake for 30-35 minutes for coffee cups and 45 minutes for large dish.
Chantilly Cream1. Whip cream to soft peaks. Add sugar and vanilla and continue whipping just until cream stiffens a bit more.
Raspberry Sauce1. Simmer all ingredients for 10-15 minutes, just enough to melt and incorporate the sugar. Puree and strain. Chill sauce before serving.
Maple Toasted Pecans1. Preheat oven to 350 F.
2. Toss pecans in maple syrup to evenly coat.
3. Spread pecans out on a parchment-lined baking sheet and toast for 15 minutes, stirring occasionally. Once cooled, the maple syrup will harden onto the nuts.
To Assemble1. Serve cobbler with cream and raspberry sauce. Nuts can be roughly chopped and scattered on top.
