An easy and delicious combination of oatmeal laces cookies and sweet berry parfait.

Directions for: Lace 'n Berry Parfait
Ingredients
Berry Parfaitcup water, boiled
3 oz package raspberry gelatin
8 oz frozen raspberries
cup vanilla ice cream
cup whipped cream topping
6 oz package fresh raspberry
Oatmeal Lace Cookies3 Tbsp all-purpose flour
tsp baking powder
3 Tbsp white sugar
3 Tbsp
2 tsp light corn syrup
2 Tbsp butter, melted
2 tsp whipping cream
1 tsp vanilla extract
cup milk chocolate, chopped
Directions
Berry Parfait1. Combine boiling water and gelatin in a blender. Cover and blend on high speed for 20 seconds.
2. Reserve half of the frozen fruit for layering.
3. Add remaining fruit to gelatin. Cover and blend until smooth.
4. Add ice cream a spoonful at a time and blend each spoonful until smooth.
5. Layer the frozen fruit with the ice cream mixture parfait style.
6. Chill in refrigerator for 12 minutes.
7. Top with whipped cream and garnish with fresh raspberries.
8. Serve with oatmeal lace cookies.
Oatmeal Lace Cookies1. Preheat oven to 375 degrees Fahrenheit.
2. Stir together flour, baking powder and sugar. Add the oatmeal, syrup, melted butter, cream and vanilla. Blend well.
3. Place 1/2 teaspoon of dough for each cookie on an ungreased cookie sheet, spaced 4 inches apart.
4. Flatten dough with your fingers. Bake for 5-7 minutes. Let stand a few seconds before removing from pan.
5. Melt the chocolate in a microwavable bowl for 1 minute at 50% power. Drizzle chocolate over cookies.
