A deep-fried mash of baked beans, bacon and cheese make these fritters a comfort food favourite.
Directions for: Fried Baked Bean Fritters
Ingredients
2 cans baked beans
3 cups bacon, cooked and crumbled
2 Tbsp cornstarch
cup water
1 cups flour, plus 1 cup for dredging
cup cornmeal
2 Tbsp sugar
1 tsp baking powder
cup milk
1 egg
1 cup shredded Cheddar
5 cups cooking oil, for frying
2 cups mayonnaise
2 tsp truffle oil
1 Tbsp lime juice
Salt and pepper
1 green onion, curled
Hot sauce or spicy sauce
Directions
1. In a medium pot, add baked beans and half of the crumbled bacon. Bring to a boil. Reduce heat. Combine cornstarch and water together. Slowly add to the pot. Continue to stir for 5 minutes or until the beans start to thicken. Pour onto a lined baking sheet and place in the fridge overnight.
2. In a bowl mix together 1 cups flour, cornmeal, sugar, and baking powder. Add milk and egg and combine until smooth. Place in fridge.
3. Preheat oven to 325F (160C). Preheat cooking oil in a large pot to 425F (220C).
4. Remove the baked beans from the fridge. Mix in the shredded cheddar cheese. Portion out the baked beans into bite-sizedballs, rolling with your hands. Dredge one of the balls through flour, and then dip into the cornmeal batter. Deep-fry until golden brown, about 3-5 minutes. Remove and place onto a wire rack. Repeat until all the balls have been deep-fried.
5. Place the baked bean balls into the oven for 10 minutes while you make the truffle aioli. In a small mixing bowl add mayonnaise, truffle oil, lime juice, and a pinch of salt and pepper. Pour into a ramekin and garnish with green onion.
6. Garnish the plate with hot sauce. Place the deep-fried bean balls on the plate and top with some crumbled bacon.
