These easy-to-make slices are a treat, especially with a steaming hot cup of coffee or hot chocolate. Keep a roll of unbaked dough in the freezer, then slice and bake a few at a time as you need them. Yield is 3 dozen cookies, or 12 servings.
Directions for: Spiced Coffee Slices
Ingredients
Coffee Slicescup butter, room temperature
1 cup sugar
cup dark brown sugar
1 tsp baking powder
1 tsp cinnamon
tsp salt
2 Tbsp instant espresso powder
1 Tbsp hot water
1 egg
2 cup flour
Assemblycup sugar
1 tsp instant espresso powder
Directions
Coffee Slices1. With an electric mixer, cream together the butter and both sugars in a mixing bowl until light and fluffy.
2. Add the baking powder, cinnamon and salt and blend well.
3. In a separate bowl combine 2 tbsp. espresso powder with the hot water until dissolved.
4. Add to the butter mixture along with the egg.
5. Stir in the flour until the dough comes together.
6. Divide dough in half and shape into 2 cylinders, about 1 1/2-inches in diameter.
7. Wrap in plastic wrap and chill or freeze until ready to bake.
Assembly1. Preheat oven to 375 degrees F.
2. Line a baking sheet with parchment paper.
3. Slice each log into slices just shy of 1/2-inch thick.
4. Put them on a parchment-lined baking sheet (about 2 inches apart).
5. Mix the 1/4 cup sugar with the 1 tsp. instant espresso powder and sprinkle the slices with the mixture.
6. Bake for 9 to 10 minutes or until edges are light brown.
7. Cool on a cookie sheet for a few minutes before transferring to a cooling rack.
