Ive worked a long time to find the ultimate chocolate chip cookie recipe thats not too sweet and is
overwhelmingly delicious. I think this is it . . . and the girls agree!
Directions for: Sarah Richardson's Chocolate Chip Cookies
Ingredients
cup butter
cup brown sugar
cup cane sugar
2 large eggs
2 tsp vanilla extract
1 tsp baking soda
1 tsp salt
2 cups Flour Power Blend (pg 205) or cake and pastry flour
1 bag (6 oz) dark chocolate chips
Directions
1. Preheat the oven to 350F.
2. Combine the butter and the sugars in the bowl of a stand mixer and beat until light and fluff. Add the eggs and vanilla and beat until completely mixed.
3. Add the baking soda and salt and mix until blended.
4. Slowly add the flour with the mixer on low speed until just combined, then stir in the chocolate chips with a spoon.
5. Drop the batter by spoonfuls onto a baking sheet lined with parchment paper, then flatten each slightly by dipping a spoon in water and pressing down on the cookie with the back side.
6. Bake for 9 to 11 minutes, until the cookies are just golden on top. (This will produce chewy, gooey cookies. Leaving them until they are brown on top will make crunchy cookies. If using the Flour Power Blend, note that the cookies will spread out and run together. Instead of being cakey, they will be light and delicate.)
