Mediterranean Hummus Pita - ★Cooking Recipes★

This is a quick way to get those delicious, Mediterranean veggies into your body. This fast and easy lunch packs quite a bit of protein and fibre. Hummus, which can be made at home or store bought contains a surprising amount of B vitamins, protein and fibre. The tahini drizzle adds a creamy flavour along with a hit of calcium.

Directions for: Mediterranean Hummus Pita

Ingredients

5 pitas

1 cup hummus

pint cherry tomatoes, sliced

10 sundried tomatoes, sliced

cup parsley, chopped

cup kalamata olives, sliced

1 cup cooked chickpeas

5 Tbsp tahini

1 lemon, squeezed

pinch sea salt and pepper

pinch za'atar (optional)

Directions

1. Lightly toast the pitas.

2. Spoon about 3 Tablespoons of hummus on each pita and top each one with sliced cherry tomatoes, sliced sundried tomatoes, olives, parsley and chickpeas.

3. Drizzle 1 Tablespoon of tahini over each pita. Squeeze about teaspoon of lemon on top of the tahini. Top with a pinch of sea salt, pepper and zaatar.
