Directions for: Fried Pickles and Chicken Waffle Donuts
Ingredients
Fried Chicken & Pickles3 - 4 large dill pickles, sliced thickly
1 - 2 chicken breasts, cut into small pieces (similar size to pickle slices)
4 cups buttermilk
2 eggs
2 cups all-purpose flour
2 tsp baking powder
1 tsp kosher salt
1 tsp paprika
1 tsp cayenne pepper
1 tsp garlic powder
tsp black pepper
Old-Fashioned "Waffle" Donuts14 oz cake flour
1 Tbsp baking powder
1 Tbsp kosher salt
1 tsp nutmeg
1 Tbsp cinnamon
1 oz shortening
1 cup sugar
4 egg yolks
1 Tbsp maple extract
12 oz sour cream
Maple Tabasco Glaze3 cups powdered sugar
cup butter, melted
1 Tbsp maple syrup
1 Tbsp Tabasco sauce
- cup hot water
Directions
Fried Chicken & Pickles1. Combine buttermilk and eggs and whisk until blended. Divide into 2 smaller bowls. Add chicken to 1 bowl and cover with plastic wrap. Marinate for 1-3 hours in cooler.
2. Combine all dry ingredients. Divide into 2 smaller bowls.
3. Toss pickles into second bowl of buttermilk mixture. Drain and toss in 1 bowl of flour mixture. Shake off excess coating and place pickles in fryer. Fry approximately 2-3 minutes until batter is golden brown and crispy. Remove from fryer onto paper towels. Immediately sprinkle with kosher salt.
4. Drain and toss chicken in second bowl of flour mixture. Shake off excess coating and place chicken in fryer. Fry approximately 3 minutes until batter is golden brown and crispy. Remove from fryer onto paper towels. Immediately sprinkle with kosher salt.
Old-Fashioned "Waffle" Donuts1. Combine all dry ingredients (flour through cinnamon) in bowl and whisk until mixed.
2. In mixer bowl, combine shortening and sugar and beat on medium until combined (it will look sandy). Add egg yolks and beat on high speed until light and fluffy.
3. Alternatively, add dry and sour cream to the egg mixture and gently mix until combined. Dough should be fairly stiff and still a little sticky (like a cookie dough).
4. Put dough in a bowl, cover with plastic wrap and chill at least 1 hour or overnight.
5. Roll dough out to approximately 1/2-inch thickness and cut with donut cutter, using enough flour to make sure dough doesnt stick to table.
6. Frying: Set fryer oil at 335F. Gently place donuts in fryer and wait until they float to the top. Continue cooking without flipping for 30 seconds after the last donut floats.
7. Turn and fry for 1 minute, 30 seconds.
8. Turn again and fry for 1 minute, 15 seconds.
9. Remove from oil and let drain. Cool for approximately 2-3 minutes before glazing.
Maple Tabasco Glaze1. Combine all ingredients except water in bowl and whisk until smooth. Gradually add in hot water until glaze is at a nice consistency (runny, but not thin).
