This dish is so simple and yummy you'll want to make it again and again!
Directions for: Chicken Artichoke Casserole with Orange Gremolata
Ingredients
Chicken Artichoke Casserole12 boneless skinless chicken, breasts
cup olive oil
2 284 g packages pearl onion, peeled
2 sweet yellow pepper, diced
cup all purpose flour
2 28 oz can diced tomato
1 cup slivered dry-packed sun-dried tomato
4 tsp dried Italian herb seasoning
1 Tbsp anchovy paste
3 14 oz can artichoke, hearts, drained and cut in thirds
1 pinch granulated sugar
Orange Gremolata1 cup coarsely chopped fresh parsley
2 Tbsp coarsely grated orange, rind
4 cloves of garlic, minced
Directions
Chicken Artichoke Casserole1. Preheat oven to 350 degrees F (180 degrees C).
2. Cut chicken into 1-inch (2.5 cm) cubes.
3. In Dutch oven or heavy saucepan, heat half of the oil over medium-high heat; brown chicken in batches, adding a bit more oil if necessary, and transferring browned pieces to large bowl.
4. Add remaining oil to pan; cook onions and diced yellow peppers, stirring occasionally, for about 5 minutes or until beginning to brown.
5. Stir in flour; cook, stirring, for 1 minute.
6. Stir in diced tomatoes; bring to boil.
7. Stir in sun-dried tomatoes, seasoning, anchovy paste, artichoke hearts, chicken with any accumulated juices and sugar.
8. Cover and simmer for 10 minutes or until chicken is no longer pink inside.
9. Divide chicken mixture between two 12-cup (3 L) shallow casseroles. (Make ahead: Refrigerate until cool, cover with foil and refrigerate for up to 1 day.)
10. Bake casseroles, covered with foil, in oven for about 30 minutes or until bubbly.
Orange Gremolata1. In small bowl, stir together parsley, orange rind and garlic. (Make ahead: Cover and refrigerate for up to 1 day.)
2. Sprinkle over casseroles before serving.
