These cookies are served up with a homemade mascarpone fondue for a relaxing and delicious apres ski experience.
Directions for: The Apres Ski Cookie
Ingredients
Ski Cookies1 cup butter, softened
cup sugar
1 cups packed brown sugar
2 eggs
2 tsp vanilla extract
1 tsp baking soda
2 tsp hot water
tsp salt
3 cups flour
2 cups semisweet chocolate chips
Mascarpone Fondue1 cups (12 oz) mascarpone cheese
cup whipping cream
cup apple juice
2 tsp vanilla
1 Tbsp honey
cup melted cheese spread
Directions
Ski Cookies1. Preheat oven to 350F (175C).
2. Whisk together the butter, sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda into hot water. Add to the batter along with the salt. Stir in flour, and chocolate chips.
3. Line a pre-greased pan with parchment. Its important to press the cookie right to the edge of the pan to create the shape of a ski. Bake until edges are nicely browned, about 10-20 minutes. Let cool and then cut into thin strips.
Mascarpone Fondue1. In a small bowl mix mascarpone, cream, apple juice, vanilla, and honey. You may need to add more cream to desired thickness.
2. Place the ski cookies around a fondue pot and fill with the mascarpone mix. Add cheese sauce to a squeeze bottle and create a design on the top of the mascarpone. Light the candle and get to dipping!
